Recipe: Chikhvi (Tripura)

Chikhvi is made of bamboo shorts and pork.

A number of Tripura dishes are prepared without oil. Chikhvi is the representative dish of the state made of bamboo shorts and pork. Ingredients:
• 500 gms Bamboo shoots peeled and chopped • 250 gm pork • 150 gm Jack fruit seed soaked, peeled and halved • 150 gm green papaya • 2 tsp baking soda • 5 green chillies • 2 tsp ginger paste • 1 tsp turmeric powder • 1 cup rice flour paste • 10 fresh lime leaves chopped Procedure: • Add baking soda in a kadhai full of water and boil for sometime. • Add all other ingredients, cover the lid and cook for 20-25 minutes. • Add fresh lemon leaved and cook uncovered for sometime more. • Serve hot with rice.
