A few pieces of leftover chicken (bones removed)
1 onion finely chopped
2 tsp chopped coriander leaves
1 tsp grated ginger
2 green chillies finely chopped
1 tsp tomato sauce
1 tsp chilly sauce
4 slices of brown bread
½ cup grated mozzarella
1 tsp butter
Heat butter in a pan. Add green chillies, onion and sauté. When the onions turn transparent, add ginger and cook for a while. Now add chicken, coriander leaves, the sauces and cook till oil separates from the mixture. Remove from fire.
Place two breads side by side. Spread equal amount of mixture on them, sprinkle mozzarella generously and cover them with the remaining slices. Grill the sandwiches and serve with sauce and salad.
