Christmas recipe: Stollen bread

For Culture

Flour--250
Milk --500
Yeast--60

Dough
Flour--550
Salt--4
Gluten--4
Bread Improver--20
Milk--65
Butter--220
Castor Sugar--65
Spices--5
Raisins--333
Orange Peel--65
Almond Blanched--65
Rum--65

Method: 

Pre mix the culture ingredients 24 hours prior.
Take a mixing bowl add all ingredients and mix well, add culture to it rest it for 15 mins.
Divide in to equal portion 400 gms each, slightly flatten it put marzipan (almond paste) and fold it again. Leave it for final proving for 20 mins.
Bake at 220 degrees for about 12 to 14 mins.
