Try this delicious Good Friday recipe!
Raw Rice, 1 cup
Moong Dal, ½ cup
Sugar or Jaggery, ½ cup
Grated coconut, ½ cup or Coconut milk, 1 cup
Raisins, 2 tablespoons
Salt, a pinch
Coriander leaves, for garnishing
Wash the rice and soak it in a little water for about half an hour.
Dry roast the Moong Dal lightly in a pan, take down.
Boil 3 cups of water and the salt in a vessel. While the water is boiling, add the rice and the roasted Moong Dal.
Cook on low heat till the rice and dal turn soft.
Add the grated coconut, raisins and sugar/ jiggery.
Simmer for about 4 to 5 minutes.
The Congee/Kunji should be of the consistency of thick soup.
You can also skip the sugar or jaggery and the raisins and add a few whole pepper corns if you want a savoury dish.
Garnish with a bit of coriander leaves.
Serve the Good Friday Congee plain or with coconut chutney!
