Greek Salad with Tofu

Prep time: 10 minutes + 60 minutes marinate

Serves 4



Lettuce 1 head, washed and dried
Cucumber 1 large, thinly slice
Tomatoes 2 large, cut into wedges
Red onion 1 small/medium, chopped
Greek black olives 1/2 cup
Tofu 16 ounces, cut into small cubes


Basil 1 teaspoon
Black pepper 1/2 teaspoon
Wine vinegar 2 tablespoon
Olive oil 1/4 cup
Salt 1 teaspoon
Oregano 1/4 teaspoon


Mix the dressing ingredients in a bowl. Pour dressing mixture over the tofu and marinate for 60 minutes. Add cucumbers, tomatoes, onion, and olives to the tofu and toss. Serve over the lettuce.
