Hot Cross Muffins
Try out these muffins to uplift your mood or just to celebrate happiness
2 cups packaged biscuit mix
1/4 cup sugar
1/4 teaspoon salt
1 teaspoon cinnamon
2 eggs, slightly beaten
3/4 cup milk
2 tablespoons melted butter
2 teaspoons finely grated orange peel
1/2 cup currants or raisins, soaked in hot water to plump, drained
Mix biscuit mix, sugar, salt, cinnamon, along with eggs, milk, oil, and orange peel.
Mix plumped raisins or currants.
Butter 12 muffin cups or line with paper baking cups.
Fill cups 2/3 full. Bake at 400° for 15 to 18 minutes.
Make vanilla icing and drizzle or pipe over muffins to make cross shapes.
