Monsoon special recipe: Apple Pie

Ingredients:

2 Refrigerated pie crusts
3 cups Granny Smith apples, peeled, coed and thinly sliced
3 cups Gala or Golden Delicious apples, peeled, coed and thinly sliced
2/3 cups sugar
¼ cup flour
1 teaspoon cinnamon
1 tablespoon butter

Method:

Heat oven to 218 degrees C. Line the bottom of an 11 inch round, ¾ inch thick pie pan with one of the pie crusts.
In a large bowl, combine apples, sugar, flour and cinnamon. Pour into pie pan and dot with butter.
On a lightly floured surface, roll the remaining pie crust to 11-inch round. Cut into ¾ inch thick strips. On a piece of waxed paper, weave a lattice pattern with the strips and slide on top of the apples to cover. Pinch together edges with bottom crust to seal. Trim the edges.
Bake for 15 minutes on 218 degrees C. Reduce heat to 190 degrees C and bake for another 30 to 40 minutes until apples are tender.
