Monsoon special recipe: Masala Yam Fries

Half Boiled Yam: 500 gms
Salt: to taste
Turmeric Powder: ½ tsp
Red Chilli Powder: 1 tsp
Oil: 3 tbsp
Lemon Juice: ½ no.
Oil to Pan Sear: 1 ½ tbsp

For the Masala:

Oil: 2 tsp
Mustard Seeds: 1 tsp
Slit Red Chilli: 4 – 5 nos.
Curry Leaves: 6 - 7 nos.
Salt: to taste
Crushed Black Pepper: to taste
Chopped Coriander:1 tsp

For Garnish:

Mayonnaise: 2 tbsp
Red Chilli Powder: ½ tsp


Cut the half boiled yam into the long fingers.
To make the marinade; in a bowl add the chopped yam, salt, turmeric, red chilli powder, oil and lemon juice and mix.
Add oil in a tan and pan sear the marinated yam.
To make the masala; in a pna add oil, mustard seeds, slit red chilli, curry leaves, some of the oil in the leftover marinade, pan seared yam, salt, crushed black pepper and chopped coriander and toss.
In a bowl add mayonnaise and some of the oil in the leftover marinade and the red chilli powder and mix.
Add the mayonnaise mixture on a plate. Sprinkle red chilli powder and place the masala yam.
Add the leftover masala on it.
