Peanut cookies can be made easily at home with most of the ingredients already present in your kitchen almirah. It can also be stored for a long period of time.
1/2 cup butter
3/4 cup powdered white sugar
1 1/2 cups flour
1/2 tsp baking powder
1 tsp vanilla extract
1/2 cup roughly ground pea nuts
3/4 cup roughly ground peanuts for coating
Sieve flour with baking powde so that it mixes well.
Cream butter and sugar. Then add eggs together beat till fluffy.
Gradually add flour then the peanuts. Keep mixing vigourously.
Add vanilla essence. Knead the dough lightly with hands.
Make small lemon size balls.
Roll them in peanuts.
Place the balls on a greased tray.
Bake for 30 to 40 mins at 180C.
Store in airtight container.
