Rakhi: Vermicelli Kheer

Rakhi is an auspicious Indian festival that celebrates the chaste and subtle bond of love and affection between brother and sister. A number of dishes are cooked on this day to celebrate this festival of love and trust.

Ingredients:

1/2 cup Roasted Vermacili
2Kg Milk
½ tsp Cardamom Powder
½ tsp Saffron
Dry fruit and resins
1/2 cup sugar

Procedure:

Boil the milk in a deep bottomed pan. Add the roasted Vermicelli and sugar and cook for a while. Let it boil till thick. Dissolve saffron in 1tsp milk. Add cardamom and saffron to the thick vermacelli and milk mixture. Garnish with soaked almonds and resins. Serve chilled.
