Recipe: Amritsari Kulcha

Enjoy the crispy Amritsari Kulcha.


For dough:

Refined flour 150 Gm
Roasted Ajwain ½ Tsp
Salt 1 Tsp
Ghee 30 Ml
Kastoori methi dryed 5 Gm

For filling:

Grated boiled potatoes 50 Gm
Grated Paneer 30 Gm
Black pepper 5 Gm
Chopped green chilli 5 Gm
Red chilly powder 3 Gm
Turmeric 2 Gm
Salt 4 Gm
Chopped cashew nut 5 gm
Chopped Pistachio 1 Tbsp
Chopped rasins 1 Tbsp
Butter 20 Ml


Make a stiff dough by mixing refined flour, ajawin, salt, ghee and kastoori methi.
Make the filling using all the other ingredients .
Divide the Dough into 80 gm balls stuff the balls with the filling,
Now roll the stuffed balls flat using the rolling pin or palms of your hand.
Bake in tandoor or cook on the griddle.
Baste with butter before serving.
