Recipe: Banana nut muffin

Learn how to make banana nut muffins with this this easy recipe.

Ingredients

2/3 cups (160ml) white flour

1/2 cups (320g) whole wheat flour

1/2 tsp. salt

2 tsp. baking powder

1/2 cups (120ml) chopped nuts (such as walnuts)

2 egg

1 tbsp. honey (or molasses, or 1T honey, 1T sugar)

1 cup milk (or soy milk)

1/4 cup vegetable oil

2 or 3 bananas, mashed

Note: Add sugar to taste, if necessary.

Procedure

Preheat oven to 400°F (200°C).

Grease a muffin tin.

Cream eggs, honey/molasses/sugar, milk, vegetable oil, and bananas.

Combine dry ingredients, then mix sparingly with wet ingredients. Lumpy batter is to be expected.

Bake for 20 to 25 (probably 25) minutes.
