Finish your meal in style with the goodness of Cashew Halwa!
Cashew Nuts (grated), 1/2 cup (125 ml)
Ghee, 1/2 tbsp
Milk, 1 1/2 cup (354 ml)
Sugar, 1/2 cup (125 ml)
Butter, 1/2 tbsp
Cardamom Powder (Elaichi), 1/2 tsp
Saffron (Kesar), a pinch
A few Cashew Nuts or almonds cut into small pieces
Fry grated cashew nuts in about 1/2 tbsp ghee, on a very low flame, till the cashews turn light brown in colour.
Continue stirring throughout.
Do not let the cashews turn very dark, remove and set aside.
Boil the milk with sugar and saffron till it becomes very thick.
Add the fried nuts and stir for about 3-5 minutes.
Once the mixture becomes quite thick and leaves the sides of the vessel, add the cardamom powder and 1/2 tbsp of ghee and stir for another few minutes.
Remove the vessel and pour the mixture into a bowl.
Garnish with chopped nuts, and refrigerate.
Once cold, the delicious Cashew Halwa is ready to be served!
