Try out this yummy fruit and nut cake.
2/3 cup chopped dried pineapple
2/3 cup red glace cherries, halved
1/2 cup chopped dried peaches
1/2 cup chopped dried strawberries
1/2 cup chopped dried mango
1/4 cup limoncello liqueur (lemon juice or orange juice)
200g butter, softened
3/4cup caster sugar
1 cup plain flour
1/4 cup pistachio nuts
3/4 cup self-raising flour
1/2 cup brazil nuts
1/3 cup dry-roasted hazelnuts
1/2 cup pecan nuts
Warmed honey, to serve
Preheat oven to 160°C/140°C. Grease the cake pan and line it with baking paper.
Mix pineapple, strawberry, mango, cherries, peach and limoncello.
Beat butter and sugar until light and fluffy and add one eggs at a time to the mixture. Continuously beat the mixture and stir in pineapple mixture, flours. Spread mixture into the pan. Top with nuts, pressing down lightly to secure.
Bake for 1 hour 45 minutes to 2 hours. Let it Cool overnight. Brush with warmed honey and serve
