Recipe: Chavleri Sag Biryani

Enjoy the delicious chavleri sag biryani.


½ Kg of Chavleri Sag - (Botonical name-Amaranthus dubius ), plucked leaves, clean & washed.
½ kg of Indian Basmati Rice.
2 medium onion chopped.
10 Garlic cloves.
5 large green chillies slit.
1 tsp of turmeric.
Salt to taste.
50 gms Coconut oil
10 gms whole spices -Cinnamon stick,Cardamom,Cloves
2 pieces of Bay leaves


Heat oil in a Pressure Cooker and add the whole spices and turmeric powder. Add chopped onion and garlic and saute till it turn slight golden brown.
Rinse Chavleri Sag leaves in three changes of water, till the water looks clear and leave it to drain. Once its dried, Chop the leaves finely and add it along with the onion and sauté for a while.
Wash Basmati rice and add it along with. Pour exactly 4 cups of water (1:2).Add salt to taste.
Pressure cook till 2 whistles. Wait until pressure is completely released.

Garnish: With fresh Mint leaves and serve along with Raitha.
Serve: 04 persons
Cooking time: 12 minutes.
