Recipe: Chicken salad with orange and mint

Chicken breast 4
Bay leaves 2
Orange grated 1 tbsp
1 tbsp Mint chop
20ml Olive oil
1 tbsp Chopped coriander
60ml Orange Juice
Salt and Black pepper to taste
Clean chicken breast. Take a pan, add water, bay leaf and peppercorn and bring it to boil. Add chicken and cook for 5 to 7 minutes or until tender. Remove and drain chicken chicken and keep them aside to cool and shred it.
Peel the orange and curt into segments. Grate orange and mix with chicken.
To prepare dressing combine chop mint, olive oil, coriander chop, orange juice, salt and black pepper, mix well.
Arrange lettuce and orange segment in a serving plate and heap the chicken and pour the dressing over salad.
