Recipe: Chicken with mushroom, leek and bacon stuffing

-1 and half kilo whole chicken meat
-1 tablespoon each of olive oil and thyme leaves
-Finely chopped 100 g button mushrooms and 2 bacon rashers
-2 tablespoon minced continental parsley
-1 leek cut into pieces
-70 g breadcrumbs
-1 whipped egg

-First preheat oven to 180 degree C and prepare the stuffing with oil in a frying pan over medium heat. Add the mixture of mushroom, bacon and leek and stir it till it turns golden brown. Place the mixture in a heatproof bowl and add breadcrumbs, parsley and egg.
- Rinse the chicken inside and out and fill the stuffing mixture. Tie the legs with a white kitchen string and tuck the wings under. Place the chicken with breast side up in a roasting pan drizzle with oil and sprinkle thyme, salt and pepper.
-Now roast the chicken in oven until golden brown. Remove it and cover with foil and set aside for 10 minutes before serving.
