Recipe: Crispy Sabudana Pancakes

Crispy  Sabudana Pancakes is a deep fried delight! Made with the fluffy goodness of sago it is a crunchy snack that's best enjoyed with a cup of tea! It involves only 10% of cooking time. This recipe is made using Vegit Sabudana Vada.

Preparation time: 5 minutes
 
Cooking time: 30 minutes approx

Makes  servings:  5

Ingredients:

100 g Vegit Sabudana mix
3 tbsp rice flour
1/2 cup grated carrots
3 tbsp finely chopped coriander
oil for cooking

Method: 

Take the Vegit sabudana mix in a bowl and add 120 ml water to it
Keep aside for about 20 minutes
Add the rice flour, carrots and coriander and mix well
Divide the mixture into 5 equal portions and keep aside
Grease a non stick tava lightly with oil
Wet your fingers and spread a portion of the mix on the tava (griddle) to form a 100 mm. (4”) diameter thick circle
Put on the gas and cook, using a little oil over a medium flame, till it turns golden brown in colour. Turnover and cook on the other side
Repeat with the remaining mix to make 4 more pancakes. Remember to cool the tava before putting the pancake on it
Serve hot with chutney of your choice
