Recipe: Cucumber and Cranberry Pancake
Flour-- 450 gm
Cucumber peeled and grated--100 gm
Cranberry-- 100 gm
Butter--50 gm + 50 gm
Baking powder--10 gm
Honey-- 50 ml
Step 1. Mix the flour and baking powder, whisk it.
Step 2. Add water to it and make smooth batter, rest it for 15 minutes.
Step 3. Grate the cucumber and squeeze the moisture. Then add it to the pancake mix, add deseeded cranberries.
Step4. Heat a non-stick pan and add butter. Pour a ladle of mixture and cook slowly for 2 mins on both side. Garnish it with grated cucumber and cranberries.
Step5. Serve hot with honey and melted butter.
