Try this tangy and tasty cucumber pasta raita.
4 cups yoghurt
1/2 cup boiled penne
2 tsp raisins
1 cucumber,peeled and finely chopped
Salt and red chilli powder to taste
1 tsp roasted cumin powder
1 tsp coriander leaves
1/2 tsp oil
A pinch of asafetida
1/2 tsp cumin seeds
1/2 red capsicum chopped in small cubes
Pudina to garnish
Whisk yogurt well and place in the refrigerator to chill.
Combine boiled penne pasta cucumber, raisins, yogurt, cumin powder, red chilli powder, coriander leaves and salt and mix well.
Transfer into a serving bowl and top with red capsicum tarka. Serve chilled.
In an iron pan, heat oil.
Add asafoetida, cumin seeds and red capsicum chopped.
Saute for 1 minute and pour over raita.
Garnish with fresh pudina leaves.Serve cold.
