Recipe: Falafel

Enjoy the mouth-watering Falafel side dish this season.

Ingredients:

Cold pressed sunflower oil 1/4 cup

Can garbanzo beans, do not drain 15 oz

Garlic, chopped 6 cloves

Sesame tahini 1 tsp

Brown rice flour ¾ cup

Xantham gum 1 tsp

Agar agar 1 tsp

Baking powder (non-aluminium) ½ tsp

Basil 1 tsp

Black pepper ½ tsp

Curry 1 tsp

Parsley 1 tsp

Sea salt ½ tsp

Cash of cayenne (optional)

Procedure:

Place garbanzo beans with water, and garlic into blender and finely chop.

Mix all the remaining ingredients in a mixing bowl except the
oil.

Place oil into sauté` pan and heat at medium temperature.

Place about a 2 tablespoons of mixture or use a small ice cream
scoop, into hot oil and cook until golden brown.

Remove from oil and place on paper towels to drain.

Serve separately or on a bed of spinach or lettuce or rice.

Top with tahini sauce.
