Do try this tasty and tangy garden gang soup.
1/4 cup sweet corn kernels, boiled and crushed in mixie
6 cups vegetable stock
1/2cup finely chopped cabbage
10 finely chopped french beans
1 grated carrot
1/4 cup boiled sweet corn kernels
2 tsp corn flour
1/4 tsp sugar
Salt and white pepper to taste
Chopped spring onion greens to garnish
Heat a deep pan, add crushed corn, vegetable stock and stir.
Add cabbage, chopped French beans, grated carrot, and boiled corn and stir to mix well. Cook for two to three minutes.
Blend cornflour in a little water and set aside. Add sugar and salt to the soup and continue to cook. Add white pepper powder and mix.
Add the blended cornflour and cook till the soup thickens.
Garnish with spring onion greens and serve piping hot.
