Recipe: Ginger Cookies
Enjoy the crispy ginger cookies.
3/4 cup butter
1 cup sugar
1/4 cup molasses
2 cups flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/4 tsp. salt
1/2 cup sugar for rolling dough
Preheat oven to 350F degrees. Grease and flour two cookie sheets.
Add butter, a cup of sugar, molasses, and egg and cream them together.
Take the dry ingredients and sift them together and add it to the creamed mixture.
If the dough is very soft, refrigerate it for about 30 minutes
Make the dough into small balls, about 1 1/2 inches in diameter. Roll the small balls in the sugar that has been set aside. Place the cookie dough balls on the cookie sheets and place them in the oven.
Do not bake both sheets at one time - save the other sheet for the next batch that you bake so that a cool cookie sheet can be used.
The time of baking may vary with the size of the balls, but check keep on checking them for about 15 minutes.
