2 cloves garlic, minced or crushed
2 fresh long red chilies, seeded and finely diced
2 tablespoons finely minced fresh ginger
4 tablespoons fish sauce (nam pla)
2 tablespoons palm sugar
4 tablespoon tamarind pulp
1 lime, juiced
4 tablespoons water
1 tablespoon sugar
2 teaspoons groundnut oil
1 teaspoon sesame oil
200 gms small shrimp
250 gms glass noodles
100 gms red and yellow peppers,shredded
4 ounces bean sprouts
3 scallions, sliced into thin circles
1/2 cup finely chopped fresh cilantro leaves, to garnish
To make the Dressing, simply mix all the ingredients together.
To make the salad, marinate the shrimp in 1/2 cup of the dressing. While this is going on, soak the noodles in freshly boiled water for 10 min only, then drain.
In a large bowl, mix the marinated shrimp with the drained noodles, scallions, bell peppers, and bean sprouts toss it in sesame oil in hot wok , to retain crunchiness and serve it warm to enjoy winter . Mix it with warm glass noodles add 2 tablespoons more of the dressing and serve warm
Sprinkle over the chopped cilantro .
