This chutney, fondly called ‘Plastic Chutney’, is a delight for the taste buds!
1 unripe papaya
2 teaspoon minced ginger root
2 teaspoon sliced garlic
200 gm jaggery
A pinch of red chilli powder
1 teaspoon salt
4 tablespoon tamarind juice
1 teaspoon garam masala
Water, as required
Wash and peel the unripe papaya; cut into thin slices.
Put the papaya slices, ginger and garlic with water in a vessel.
Bring the water to a boil, over medium flame.
Add the jiggery, salt and a bit of chilli powder
Bring it to a boil over medium heat and then add jaggery, salt and a pinch of red chilli powder.
Continue cooking for about 5 minutes.
Stir in the garam masala and the tamarind juice. Mix thoroughly.
Cook for 10 more minutes, or till the desired consistency is achieved.
Once the chutney thickens, remove the pan from heat and let it cool.
Serve as needed.
