Recipe: Holiday Fruitcake
Try out this tasty cake.
2 large eggs
1 1/2 cups water
1/2 cup rum (or water or fruit juice, if desired)
1 cup green candied cherries
1 package date quick bread mix
1 package nut quick bread mix
1 1/2 cups pecan pieces
1 1/2 cups golden raisins
1 cup red cherries
1 cup mixed fruit
Pre heat the pan at 300 degree C. Grease the pan and flour its bottom and sides.
Mix eggs, water and rum in large bowl and beat the ingredients together.
Add the other remaining ingredients and stir them well with hand until it mixes on well. Pour the mixture into the pan.
Bake it in the oven for 65 to 75 minutes or until wooden pick inserted in center comes out clean.
Cool it for 30 minutes in pan.
Remove the cake from pan and cool it completely on a wire rack.
To store, wrap tightly in foil and refrigerate.
