Start your Sunday with this low-fat, delicious sandwich!
4 slices of rye bread
8 slices of cucumber
1 large ripe tomato, sliced into 4 pieces
2 thin slices of red onion
1/2 avocado, peeled and thinly sliced
1 teaspoon of lemon juice
4 teaspoons of honey mustard
2 leaves of lettuce
Toast the bread lightly.
Add a tiny bit of lemon juice to the avocado slices to prevent them from turning brown.
Spread a bit of honey mustard on the bread.
Put the lettuce leaves on the bread, then the tomato slices, cucumber slices, red onion and the avocado.
Pour the remaining honey mustard over the vegetables.
Secure the sandwich with a toothpick, if you want to.
You can make your own honey mustard too. Combine honey and prepared yellow mustard together to taste.
