Enjoy your meal with jhat pat thali peeth.
Thali Peeth Flour – 1 cup if available or mix the following,
Rice Flour – ¼ cup
Whole Wheat Flour – ¼ cup
Bajri Flour – ¼ cup
Jawar Flour – ¼ cup
Besan – ¼ cup
Coriander powder – 2 tbsp
Roasted Cumin Powder – 1 tsp
Black Pepper Powder – ½ tsp
Fenugreek powder – ½ tsp
Clove powder – ½ tsp
Cardamom powder – ½ tsp
To the above, add:
Green chilli chopped – 1 tsp
Ginger Paste – ½ tsp
Green Onions – 3 to 4 or regular
Fresh Coriander chopped- 1 cup
Red Chilli Powder (kuti) – 1 tsp
Sour Yoghurt – ½ cup for binding
Oil – For frying
Sesame Seeds Roasted – 1 tbsp
Roasted Coriander & Cumin Powder – ½ tbsp
Salt – to taste
Bind a soft dough using the yoghurt, add very little water if required.
Heat pan with 1 tbsp of oil.
Make small round balls of the dough. Place them on a wet cloth one at a time.
Using wet hands spread evenly and make a couple of holes in the centre.
Using the cloth, turn the cloth upside down on the hot pan.
Cover & cook evenly on both sides using adequate oil till it is slightly crisp on each side.
Serve hot along with pickled chillies, onion, green chutney & a dollop of home-made white butter.
