Recipe: Mexican Rice
Quick to make and delicious to eat!
1/2 cup sliced onions
1 tsp grated garlic (lehsun)
1 tsp dry red chilli flakes (paprika)
3/4 cup sliced coloured capsicum (yellow, green and red)
1/3 cup sliced tomatoes
2 1/2 cups Milk Rice
3 tbsp boiled rajma (kidney beans)
salt to taste
Heat a non-stick pan on a medium flame and when hot, add the onions and garlic and dry roast till the onions turn light brown in colour.
Add the red chilli flakes, capsicum and tomatoes and dry roast for a minute.
Add the milk rice, rajma and salt and cook while stirring continuously for 3 to 4 minutes.
