Recipe: Mint Virgin Pina Colada
A favourite with children, not very fattening, and a very refreshing drink for the summers...
1 Bowl Pineapple finely diced
½ Cup Sugar
Fresh Juice of 2 large lemons
Half cup of Mint leaves (pudina)
5 glasses of cold water
Start by blending in the sugar and the pineapple together till it is smooth.
Add the water and blend again. Strain this mixture till the solids can be thrown out. Strain the pulp for better flavouring.
Blend the mint leaves separately and freeze for an hour.
Whisk in the Mint leaves, lemon juice into the pineapple and sugar mixture.
Freeze till chilled.
Serve over crushed ice and garnish with a slice of lime and a mint leaf for garnish.
