Recipe: Mutton Fricassee

Here is one of the most mouth-watering non-vegetarian dishes from continental cuisine.


500 gm Mutton (Breast pieces)
115 gm Onion
1 piece Bay leaf
A sprig of Parsley
A pinch of Mace
600 ml Stock
30 gm Refined flour
450 gm Carrot
15 gm Fat
As per taste Salt
As per taste Pepper


1. Trim the meat and cut into pieces
2. Sauté the sliced onion
3. Add bayleaf, mace and parsley
4. Add meat and cook slowly for 10 mins.
5. Add stock and simmer till meat is tender
6. Blend the flour with a little stock and add to fricassee. Bring to boiling point and season
7. Boil carrots separately
8. Dish the meat on a pile and strain the gravy over, now surround it with cooked carrots
9. Garnish with chopped parsley
