Recipe: Raisin Date Cake


200gm sour cream (25% fat)
200gm sugar
300gm white flour
1/2 tsp baking powder
2 eggs
Vanilla extract, if desired
100gm raisins
200gm dried dates, cut into pieces

How to make

Preheat oven to 150 degree Celsius.
Whisk together flour, baking powder and salt.
Combine sour cream, sugar, eggs, vanilla extract and mix well.
Add the dry mixture and mix until well combined.
Fold in the raisins and dates.
Butter a loaf pan and pour in the batter.
Bake for about 1 hour, until done.

Note: Any kind of dried fruits can be used instead of raisins and dates. The taste of lemon goes very well with this cake. So add some lemon flavour, lemon zest or lemon juice to the batter if desired.
