This vegan raspberry brownie recipe very low in fat and of course, it`s also egg-free.
•3/4 cup whole wheat flour
•1/2 tsp baking powder
•1/2 tsp salt
•3/4 - 1 cup sugar
•3 tbsp cocoa
•1 very ripe banana, mashed
•1 heaping tbsp ground flax seeds (flax meal)
•1/4 cup water
•1/2 cup applesauce
•1 tsp vanilla
•3/4 cup vegan chocolate chips
•1/2 cup chopped walnuts
•1 cup raspberries, coarsely chopped
Preheat oven to 350 degrees and lightly grease an 8-inch square baking pan.
Combine whole wheat flour, baking powder, salt, sugar and cocoa in a large mixing bowl.
Mix ground flaxseeds with water in a small bowl and allow to stand for about five minutes, or until gooey.
Mash banana in a separate small mixing bowl. Combine applesauce, vanilla and flaxseed mixture with banana.
Combine wet banana ingredients with dry whole wheat flour ingredients and mix until combined.
Add in chocolate chips, walnuts and raspberries. Pour mixture into prepared baking pan.
Bake for 30 – 40 minutes or until done. Look for dryness of top of brownies and check to see if the brownies are slightly pulling away from sides of dish after 30 minutes. If not, leave in the oven for a few minutes more.
