Enjoy sumptuous tricolour biryani.
2 cups basmati rice
1/2 cup mixed vegetables (peas, carrot, beans, cauliflower)
1 onion chopped lengthwise
3 tbsp oil
1 chopped potato
Salt to taste
1 tsp turmeric powder
Piece of cinnamon
1/2 cup beaten curd
1 bay leaf
1 tsp garam masala
2 tsp grated coconut
1/2 cup chopped coriander leaves
2 green chillies
Piece of ginger
1 chopped onion
Wash and soak the rice for ten minutes.
Cook the rice with one tsp oil, salt, bayleaf, cinnamon, cloves.
Divide into three portions.
Heat the oil, add onion, cashews, potato and fry till onions are brown.
Add turmeric powder and one portion of the rice.
Cook rice with 2 tsp oil and add garam masala and curd.
Add a little salt and then add the second portion of rice.
Add cooked vegetables to the third portion.
Take a kadai, spread some fried onions in the base.
Next spread a layer of the rice with yellow food colour.
Then spread the plain rice with vegetables as the second layer.
Finally spread the third portion of rice with masala paste.
Cook on low flame for 5-10 minutes.
Serve piping hot with a wonderful curry or raita.
