Recipe: Scrambled Egg Muffins

½ cup chopped spinach
? cup skimmed milk
? cup whole wheat pastry flour
¼ cup grated cheese
1 tbsp chopped basil
1 chopped small tomato
½ tsp Sea Salt
½ tsp cracked black pepper

How To Make:

1. Preheat oven to 350.
2. Break the eggs into a bowl and whisk.
3. Add the rest of your ingredients and mix it all together.
4. Add spoonfuls of the mixture to a non-stick muffin tin or a tin sprayed with non-stick coating.
5. Pop them in the oven and bake for 25 to 30 minutes or until they are done.
