Recipe: Sevai (Vermicelli Pudding)

Ingredients

200 gms Vermicelli
1 litre Milk
250 gms Sugar
1 tsp Cardamom powder
2 Pinches Saffron
15-20 pieces Cashews
A handful of Raisins
8 tbsp Ghee (clarified butter)

How to make Vermicelli Pudding:

Take an iron vessel and put some ghee in it.
Now, roast the vermicelli in the ghee till a golden brown is attained.
Boil the milk and then add vermicelli to it.
Keep the milk and vermicelli mixture on a low gas flame till the vermicelli gets cooked. Make sure you keep stirring it every 20 seconds.
Add sugar to the above mixture.
Now add cardamom powder and saffron.
Continue cooking the mixture on the gas flame till the thicker form is achieved.
Garnish it with cashew nuts and raisins.
Turn off and flame.
This dish can be served either hot or chilled.
