Try out this simple Christmas roast chicken.
-1 ½ kilos of whole chicken
- 2 stem each of minced rosemary and thyme
-2 chopped onions
-1 tablespoon olive oil
-3 medium size potatoes
-6 cloves of garlic
-sea salt and ground pepper
-Preheat oven to 220 degrees C
-Make a mixture of grated rosemary, thyme, 2 garlic cloves, lemon rind, salt, pepper and teaspoon of olive oil in a bowl. Place the chicken in a bowl and rub it under the skin and put sliced lemon inside the chicken cavity.
- Roast for 20 minutes and turn down the oven to 190 degrees C. Again roast for 50 minutes.
-Now place the cut potatoes, onion and garlic cloves with olive oil in a roasting tray. Sprinkle salt and pepper and cook for an hour. Cover the vegetables and chicken and set aside for 10 minutes before serving.
