Relish the delicious Subz Nizami Biryani.
Rice 70 gms
Carrots 20 gms
Beans 20 gms
Paneer cubes 30 gms
Cauliflower 20 gms
Green peas 20 gms
Turmeric powder 10 gms
Whole garam masala 20 gms
Fennel seeds 15 gms
Cumin seeds 15 gms
Chilli powder 15 gms
Ghee 100 gms
Mint 10 gms
Ginger 5 gms
Hyderabadi garam masala 20 gms
Green chilli 5 gms
Brown onion 20 gms
Curd 50 gms
Ginger paste 10 gms
Galrlic paste 10 gms
Heat oil in a pan, add fennel seeds, cumin, and whole garam masala. Cook for a moment add ginger garlic paste. Stir and add turmeric powder along with red chilli powder.
Add all vegetables and cook on dum until half done.
Heat water, add a little ghee and whole garam masala.
Add soaked rice and cook until under done and hard. Strain and keep aside.
Heat desi ghee in a lagan, speard half the quanitiy of semi cooked rice.
Mix curd in cooked vegetables add hyderabadi garam masala powder.
Spread this on to rice and cover with remaining semi cooked rice.
Put brown onions, mint leaves, green chilli and finely cut ginger on top.
Temper with desi ghee mixed with cumin powder and fennel powder.
Cook on dum over a slow flame.
Serve steaming hot with mirch ka salan.
