Recipe: Tricolor Rice

Try this patriotic delicious dish today!

Ingredients

Long grained rice - 700 gm
Butter - 115 gm
Saffron thread crushed - 2 tsp
Cardamom(Elakka) - 4 nos
Cloves(Grambu) - 5 nos
Cinnamon(Karugapatta) sticks - 3 nos
Onion - 2 nos
(finely chopped)
Green pepper - 2 nos
(chopped)
Red pepper - 2 nos
(chopped)
Chicken stock - 1.4 litres
Pepper - As reqd
Salt - As reqd


Procedure

Put the saffron in a bowl with 2 tbsp of boiling water and leave it to soak.

Melt the butter in a heavy bottom saucepan and add the cardamoms, cloves, cinnamon sticks and fry for three minutes.

Add the chopped onions and cook till golden brown.

Then mix the green and red pepper and fry for five minutes.

Add the rice and fry for another two minutes.

Mix the chicken stock, saffron, salt and pepper powder and bring the rice to a boil. Turn the heat to a low flame and cook till rice is done.

Serve hot.
