Try out this tasty turkey with pancetta.
-3 kilo turkey buffe ( breast and wings)
-2 tablespoon each of olive oil and plain flour
-1 ½ cups chicken stock
- 40 g melted butter
-2 tablespoon each of fresh parsley and basil leaves
-2 cups stale breadcrumbs
-2 grated garlic cloves
-1 chopped onion
-1 tablespoon crushed lemon rind
-1 tablespoon olive oil
-1 ½ tablespoon lemon juice
-100 g chopped pancetta
-20 g butter
-First prepare pancetta and herb stuffing. Put oil and butter in a non-stick frying pan over medium heat and fry pancetta, garlic and onion. Stir it until golden brown and take it out in a separate bowl. Now add this mixture along with basil, breadcrumbs, parsley, lemon rind and juice. Sprinkle with salt and pepper.
-Preheat oven to 180 degree C. Fill the cavity of turkey with the stuffing and place it in a large roasting pan. Brush the turkey with the mixture of butter and oil and cover it with baking paper and a layer of foil.
-Roast the turkey in an oven for 1 hour. Take it out, remove foil and paper and baste turkey with pan juices. Re-cover and roast it again for an hour.
- Remove turkey from the oven, throw away the foil and brush it again with pan juices. Roast it again uncovered until golden brown. Remove it in a plate and cover loosely with foil. Set aside for 10 minutes to rest.
-Put the pan juices in a non-stick pan and add flour and cook it for 2, 3 minutes over a medium heat. Stir it for 3, 4 minutes or until sauce thickens.
- Place the turkey in a platter and serve with stuffing and gravy.
