Try this delicious cherry tomato chicken recipe in pesto sauce.
Boneless chicken breast – 4 pieces
Cherry tomatoes – 200 gms
Pesto – 3 Tablespoons
Crème fraîche (Naturally Soured cream)
Few fresh basil leaves
Oil to fry
Salt to taste
Heat the oil in a non stick frying pan.
Shallow fry the chicken until it takes on light golden colour on both sides.
On low flame let the chicken cook through for 10 to 12 minutes
Sprinkle in the salt and pepper.
Halve the cherry tomatoes and add to the pan. Let it soften.
On low heat add the pesto and crème fraîche. Mix slowly.
Garnish with fresh basil.
