Recipe: Special Egg Curry

Forget all about calorie count for a while and try out this rich aromatic egg curry and pamper your taste buds!

Ingredients:

5 boiled and shelled eggs
1-cup onion paste
2 tsp almond paste
2 tsp cashew paste
4 tsp poppy seeds paste
½ cup ghee
2 tsp curd
1 tomato chopped
1 tsp ginger paste
1 tsp garlic paste
1 tsp coriander powder
1 tsp cumin powder
1 tsp turmeric powder
2 tsp chopped pistachios
2 tsp chopped almonds
1 tsp chopped green chillies
Salt to taste

Procedure:

Heat ghee in a pan. Deep fry eggs till golden brown and keep aside. Now add onion paste and fry till pink. Add ginger, garlic, salt, turmeric, coriander, cumin and sauté. Now mix together curd, almonds, cashew and poppy seeds paste and pour in the pan. Add chillies, tomatoes, chopped pistachios and almonds and fry till the mixture starts leaving the sides of the pan. Add eggs, mix well, pour 1 cup water and allow simmering for 10 minutes. Remove from fire and serve hot.
