Valentine's special recipe: Vanilla Strawberry Tart

Whip up this tasty delight for your love

Vanilla Pastry Cream


  • 250 g milk
  • 50 g caster sugar
  • ¼ piece vanilla bean
  • 50 g egg yolk
  • 25 g corn starch
  • 25 butter


  • Dissolve the corn starch with the egg yolk and some of the cold milk
  • Boil the remaining milk together with the sugar and vanilla seeds
  • Add the egg mixture into the hot milk and stir well
  • Bring the mixture back to boil whilst mixing
  • Take of the fire and add the butter, mix until well combined
  • Place the pastry cream into a container and cover tightly with plastic wrap
  • Place into refrigerator to cool down

Sugar Dough:


  • 100 g sugar
  • 200 g butter
  • 300 g flour (Maida)
  • 2 g salt
  • 2 g vanilla essence


  • Mix butter, caster sugar, salt and vanilla essence together until well combined
  • Add the flour and mix until the dough forms and dough
  • Wrap the dough in plastic film and place into the refrigerator until firm
  • Roll the dough to 3 mm thickness and line a tart mould with it
  • Place a baking paper in the size of the tart base into the tart and fill with beans
  • Place the tart into the oven 175C until the edge of the tart turn golden brown
  • Remove the tart from the oven and remove the beans
  • Brush tart with egg yolk and place in into oven for 3-4 min until golden brown
  • Let the tart cool down

Putting it all together

  • Place the Pastry cream into the prebaked tart shell and spread evenly
  • Garnish with fresh strawberries and serve
