Flare bartender Ami Shroff reveals secrets behind her success.

“I have to confess that I haven't really had formal training in bartending from any institute. I am in this profession by chance. It all began in 2003 while vacationing in Goa. A flare bartender at one of the bars offered to teach us his skills. I fell in love with this bar art. My Karate training helped in flawless hand and eye co-ordination, which is required in this job. Bartending is a passionate career and not just a job.

Flare bartending, which is my specialty is even more niche. Since I'm a self-confessed vagabond I haven't associated myself with a particular restaurant or night club. I'm a freelancer and make my money as a guest bartender at events, parties and a few hotels.

Freelancers are paid on per day basis depending upon how many gigs one performs. If you are a newbie or assistant bartender then you can expect anything from Rs 1,000 to 1,500 per day. An experienced professional easily demand up to Rs 15,000 per day. A greenhorn will get Rs 8,000 per month but within a couple of year may draw up to Rs 20,000.

Contrary to the popular perception, Indians are now well-adjusted to the idea of a woman bartender. At first you are sure to get inquisitive glances, but once you show off your flare skill, that's all they will talk about.

At the end of the day it's a hospitality job, hence, bartenders must have excellent people skills and patience. Guests come to the bar with different moods and even knowledge of drinks. Mistakes like pouring the wrong drink, spilling a spirit, placing the glass wrong and many more are bound to happen. Take it in your stride and make the bar a vibrant happy place with your tending skills.”
