World Food Day celebrated every year on the 16th day of October from nearly three decades might have begun on a serious note, with the noble aim of providing food security to the millions deprived of this basic necessity for survival. Even the UN General Assembly admitted that food is "requisite for human survival and well-being and a fundamental human necessity". But don’t you think, food today has changed dimensions? From the food of India, China, Japan and America it has now become ‘world food’?

30 years ago the food that crossed boundaries was inevitably meant for some remote draught ridden place where millions languished in desire of a few morsels. But the food of today has forgotten all borders. How many of us care to note that Chicken Chilly is Chinese, Thukpa is Thai, Pizza is Italian, Sandwich is British and Tortillas are Mexican? And for that matter even the sauces, cheese and seasonings are all transnational! Food is not just the basic requirement of body. It is also a binding force, a symbol of toleration, adaptation and acceptance. Twenty years ago our grannies would not even touch pizzas but today quite a large number of older people are seen in Pizzerias and fast food joints, happily feasting on multi-national gourmet. This is a beautiful example of cultural intermingling. This spirit of oneness needs celebration and rejoicing, this breaking of barriers needs cheers and applauds. So we have decided to celebrate the festival of food by exploring the cuisines, which appeal to the global palate more than others, their tastes, nuances and key ingredients. Also we have created some amazing fusion recipes to truly celebrate the spirit of global amalgamation!
