16 Idlis Fresh or Leftover, 2 tbsp Oil, 2 teaspoon Mustard Seeds, 10-15 Curry Leaves, 1 teaspoon Garam Masala Powder, Red Chili Powder, Salt and thinly sliced veggies of your choice (for 6 servings)
Take leftover idlies and cut each idli into 6-9 pieces and keep it aside.
Heat the oil pan, add mustard, curry leaves and onions in it. Then fry it until onions change its colour.
Then mix rest of the vegetables like, green bell peppers, carrots, french beans and cabbage. Then sauté those for 2-3 minutes until it gets turn soft.
Add spices like, garam masala, red chili powder, and salt in it.
When spices and veggies get cooked, then add pieces of idli in it and keep stirring it for 2 minutes.
Now, your authentic masala idli is ready to serve. Pair it with ketchup or chilli sauce.
