In a mixing bowl, combine whole wheat flour, chopped methi leaves, turmeric, chili powder, cumin seeds, ajwain, and salt.
Mix in the oil or ghee to bind the dough together.
Gradually add water and knead into a smooth and soft dough.
Cover the dough with a damp cloth and let it rest for 15-20 minutes.
Divide the dough into small balls, roll each into a flat disc (paratha) using a rolling pin.
Heat a tawa or flat pan. Cook the rolled paratha on medium heat, flipping it once until both sides are golden brown.
Serve hot with yogurt, pickle, or any chutney of your choice.
