Step 1

Collect oats, fermented idli batter (or yogurt), water, salt, and optional vegetables like grated carrots or peas.

Step 2

Roast the oats lightly in a pan for a few minutes until aromatic, then let them cool.

Step 3

Blend the roasted oats into a fine powder using a blender or food processor.

Step 4

In a bowl, combine the oat flour with the fermented idli batter (or yogurt) and add water to achieve a smooth consistency.

Step 5

Fold in any chopped vegetables you like and season the batter with salt.

Step 6

Fill a steamer or idli maker with water and bring it to a boil while you prepare the idlis.

Step 7

Pour the batter into greased idli molds and steam for about 10-12 minutes, or until a toothpick comes out clean. Enjoy your healthy oats idli with chutney or sambar!
