Step 1

Collect oats, peanuts, curry leaves, mustard seeds, onions, green chilies, turmeric, lemon, and salt for seasoning.

Dry roast oats on medium heat for 3-4 minutes until slightly golden, then set aside.

Step 3

Heat oil, add mustard seeds, curry leaves, and peanuts. Sauté until seeds splutter and peanuts are roasted.

Step 4

Add chopped onions and green chilies, and sauté until onions turn translucent.

Step 5

Stir in turmeric, salt, and other spices of choice, mixing well with the sautéed vegetables.

Step 6

Add the roasted oats, mix thoroughly, and cook for 2-3 minutes until combined with the vegetables and spices.

Step 7

Squeeze lemon juice over the oats poha, garnish with fresh coriander, and serve hot for a healthy meal.
