Till the okra is soft, steam or boil it. Squeeze out extra water after letting it cool slightly.
In a bowl, mix the mashed potatoes, chopped okra, onion, coriander, ginger, breadcrumbs, salt, and pepper.
Form the mixture into tiny, circular patties.
Add breadcrumbs to each kofta.
In a pan, heat the oil over medium heat.
Carefully place the kofta in the hot oil and fry until golden brown on all sides.
Serve the okra kofta hot with your favorite curry or chutney.
